How to make a simple Sourkraut soup (kapustnica)

Ingredients

First off, finely dice the two onions. I've used a food processor, but if you don't have one, a knife will do fine. Now dice your garlic and cut the sausage into bite-sized wheels. Once you have these ingredients cut up, take your pot and put in a healthy amount of olive oil. Turn it up to almost max power and wait a bit. Once the oil is hot but not sizzling, add your onions. Be sure to stir them constantly, or else the burnt flavor will make the soup taste odd. Once they're transparent or slightly caramelized, throw in the garlic and stir for two minutes. Once that is done, take your paprika, salt, and pepper mixture and stir it into the onions and garlic. Once they're all well mixed, add the sausage and let it sweat out some of the fat. Once your kitchen smells amazing, add the bay leaf and the sauerkraut. I like to add two 650g jars. Now cover with water and let it simmer on medium-low for one or two hours, depending on how hungry you are, but the more the better. Once only 10 to 15 minutes of cooking time is left, add the dried plums and just let it simmer a bit so the sweetness gets everywhere. Then you're ready to serve warm with bread.
